Hout Batata Wa Tamatem (BN's Moroccan Roast Fish with Potatoes & Tomatoes)

This is a good one - also a favourite of BN and JP, who gave us the recipe.

Sprinkle the fish with salt

Mix all the ingredients, besides the fish and potatoes and tomatoes. Marinate the fish in half of this sauce for 30 mins.

Preheat oven to 245C. Cut potatoes into slices 0.5cms thick and the tomatoes into 1cm thick slices. Brush baking dish with olive oil, put in potatoes and tomatoes and drizzle a little oil on top. Sprinkle with salt and turn the vegetables so they are well seasoned and lightly coated with oil. Bake for 50 minutes or until potatoes are tender. During the cooking turn over once so that the top ones get to sit in the juice too.

Take the pan out of the oven and place the fish fillets on top. Bake for another 10-12 minutes or until the fish is cooked thr.ough

Just before serving pour remaining marinade over the fish.
