Rice Pudding

Serves: 6

Put milk, rice and sugar in a dish. Grate some nutmeg on top.

Cook at 170C for 1.5 hours or until the rice is cooked and most of the liquid has been absorbed. Stir after 30 minutes and then again after an hour or so.

Options: swap 500mls of milk for cream. Heat milk/cream and sugar in pan with orange zest and a bruised cardomom pod first. Dissolve sugar anf boil milk, then into the oven dish. Serve with some stewed fruit, or jam.
