Tomato, Herb and Goat Cheese Spaghetti

Serves: 2

We usually do this with penne. While the recipe calls for basil and parsley, we have also used coriander or celery leaves which are just as good.

Get the pasta on first. Heat the stock, add garlic and saute for 2 minutes. Add cherry tomatoes and cook until they go a bit soft - 1 or 2 minutes.

Add the cooked pasta to the tomato mixture, and then the herbs and the cheese, and mix it all up. Season with salt and pepper.
